1.5 oz (45g) of lemon peel, orange peel or/and peeled ginger, sliced into thin strips
1 tbsp+ 1 tsp. (20g) of sugar
4 tbsp. (5cl) of water + more to cook ginger
Bring water to a boil (enough to cover the ginger) and cook the ginger for about 10 min.
In another small pot, bring the 4 tbsp. of water and the sugar to a rolling boil and mix well. Simmer until the syrup thickens. Throw in the sliced fruits and keep mixing until they are evenly coated and ensure that the syrup doesn’t start burning. Mix until the liquid evaporates. Place candied fruits on parchment paper to dry.
