Mochi

Every few nights, I like to take a walk to the nearest frozen yogurt shop. I always go for the tart flavor because I want the focus to be on the toppings. Mine are pretty simple, I always go for some kind of berry, shredded coconut, chocolate chips and mochi. Double the mochi. It’s not a good frozen yogurt treat without some. When I get lazy I make my own at home with Greek yogurt but the mochi was always missing, so I decided to make my own. It’s actually quite simple! I may not be the biggest fan of microwaves but I admit it comes in handy in this case.

Mochi
Makes 3 cups

1 cup of sweet rice flour (mochiko)
1/4 cup of sugar
1 cup of water
1/2 cup of cornstarch

INSTRUCTIONS:

In a small glass bowl, add the sweet rice flour with water and sugar. Mix well. Cover the bowl with a plastic wrap.
Cook the rice flour mixture in the microwave for 4 minutes. Let it cool a little bit until it’s safe to touch without burning yourself. It should still be hot.
Dust some cornstarch on your work surface.  With your hand, scoop out the mixture and flatten it a little bit in the cornstarch, forming a rectangle. Cut the rectangle into little pieces as seen in the picture above.
Eat that day or as they will get harder and harder as days go by.
