Some nights I come home and lack the energy to cook anything that will require a lot of effort or time. I usually turn to pasta but by the end of the meal I scold myself, thinking that I could have gone a lighter or healthier route. A few years ago I went through a phase where I was eating chorizo at least 3-4 times a week. It reminded me of all the times the chorizo and saucisson were present at my grandmother’s table. Chorizo is also an easy way to get your meat in since it doesn’t take long to cook. I started throwing it in different dishes and this one stood out to me because it was simple, quick and tasty.
Zucchini Chorizo and Almond Stir-Fry
Preparation time: 10 min
Cooking time: 10 min
2 zucchinis, diced
2 tbsp. of olive oil
3/4 cup (80g) of sliced almonds
1/2 tsp. of curry powder
3 oz (80g) of pork chorizo
1 garlic clove
10 mint leaves, roughly chopped (optional)
Throw the diced zucchini in a bowl. Add the curry powder, salt and pepper and set aside. Mince the garlic.
If using dry chorizo, dice it up. If using uncooked chorizo, remove the meat from casing and cook in a separate pan for about 5 min, until slightly brown.
In another pan, add the olive oil, zucchini and garlic and cook on high heat, mixing well. Add the almonds and chorizo. Cook for about 5 minutes. Remove from heat, add the mint (optional) and serve immediately.
Keeps one day in the fridge.
